Spiced Banana Muffins (vegan)

Today was a long day. In it, I managed to work out my triceps and chest, host lunch, take a siesta and baked these amazing things! 

First, I sifted one cup of unbleached flour. 

Added 2 teaspoons of baking soda. 

1/2 teaspoon of Kosher salt 

1/2 cup of brown sugar 

1 tablespoon of pumpkin pie spice (for that aromatic and spiced goodness) 

Wisk to combine

In a separate bowl, mash up a couple of very ripe bananas 

Add 1/2 teaspoon of vanilla extract 

Add 1/3 cup of melted coconut oil 

1/4 cup of almond milk (plain) 

Wisk to combine mixture. 

And I almost forgot, add 1 tablespoon of white vinegar. (We are using this not for the tang factor, but rather, it's going to react with the baking soda and make these babies fluffy and rise! Yay for science!)

Now add the dry ingredients into the wet ingredients bowl. Do it in two separate batches so you do not crowd the bowl. 

Fold in the mixture carefully to combine. 

To transfer the batter into my mini-muffin tins easily, I put the batter into a zip top bag, and clipped off one of the corners to make my own make-shift piping bag. Bake in a preheated 400 degrees oven for 10 minutes. Allow to cool for 15 minutes before consuming. Have fun in the kitchen! 

(Notice how one of them is missing? I had an uncontrollable urge to sample one and totally forgot to take a picture first. :] )

[Bakes 30 mini muffins]

2 ripe bananas, mashed 

1/2 teaspoon of vanilla extract 

2 teaspoons of baking soda 

1/2 teaspoon of kosher salt

1 tablespoon of pumpkin pie spice (optional)

1 cup of unbleached flour, sifted 

1/2 cup of brown sugar (either light or dark will do) 

1/3 cup of coconut oil, melted 

1/4 of almond milk, plain 

1 tablespoon of white distilled vinegar 

Preheat oven to 400 degrees Fahrenheit. In a large bowl, whisk together flour, salt, pumpkin pie spice, brown sugar and baking soda to combine. Set aside. 

In a separate large bowl, mash 2 ripe bananas and add vanilla extract, melted coconut oil, white vinegar and almond milk. Wisk to combine all ingredients into a homogenous mixture. Take the bowl with the dry ingredients and pour half into the wet ingredients bowl. Stir slowly to combine. Once well incorporated, add in the rest of the dry ingredients into the wet ingredients bowl. 

Spray mini muffin tins with cooking spray and add about 2-3 tablespoons of batter per muffin slot. Bake in preheated 400 Fahrenheit oven for 10 minutes. Allow to cool for 15 minutes before consuming. Have fun in the kitchen!
