Hokey Poke - 200 Calories - 4 Points Plus

-1 pound of fresh yellowfin tuna (ahi), ½ inch cubed -½ a medium hass avocado, ½ inch cubed -½ cup of english cucumber, cut in half lengthwise then sliced thin - ¼ cup of a red onion, thinly sliced - 2 cloves of garlic, grated or minced -1 teaspoon of sesame seeds -1 tablespoon of thinly sliced scallions

For the marinade: -½ cup of low sodium soy sauce

-Pinch of salt

-2 teaspoons of wasabi powder -1 teaspoon of toasted sesame oil -2 teaspoons of sriracha sauce (optional)

In a bowl, whisk together soy sauce, wasabi powder, toasted sesame oil and sriracha sauce until the wasabi is fully dissolved. Set aside.

In a large bowl, toss together tuna, english cucumbers, red onion, garlic and sesame seeds. Stir lightly 3 or 4 times until all items are fully incorporated. Add marinade and cubed avocado and toss 4 or 5 more times lightly. Top with scallions with serving.

Confession: I loved this so much I ate two servings. But at only 400 calories/9 points, how could I say no?

(Warning: This is probably not safe to eat everyday of the week since all fish, especially tuna contain traces of methylmercury.)
