Game Day Changer: STUFFED Wings

I've always been a fan of wings but once I tried them stuffed, I cannot have them any other way! Today when I made some for my sis, her boyfriend and my boyfriend, I told them that it was a true testament to my love for them. Let's be honest, de-boning the wings are a beech. So, this is definitely something you want to make for a special someone.

Chop up some garlic, cilantro and scallions real fine.

Soak up some mung bean noodles in hot water for 5-10 minutes. Drain completely.

Don't know what mung bean noodles are? They are noodles made from mung beans and adhered together by potato starch. They are a great alternative to rice noodles. You can buy them at Asian supermarkets and health food stores.

You're gonna need some good quality oyster sauce

Add some good quality oyster sauce to the cut up mung bean noodles, ground turkey, garlic, scallions and onions in a large bowl

Season with ground black pepper (fresh is best)

Salt too

Add an egg

Break it up

And give it a whirl

Mix to combine. This is going to be the gold you stuff your wings with.

I like to test taste the stuffing by cooking up a little bit in a pan before I stuff the wings. After the stuffing is cooked, taste it and season the uncooked stuffing with more salt and pepper accordingly. (Tip: if you find that it's too salty for you, add about 2 ounces of more unseasoned ground turkey. It will temper the savoryness.)

Time to de-wing these babies.

Run a sharp paring knife around the bone of the tip of the wing and separate the meat from the bone.

Say, goodbye.

Now do the same with the middle part of the wing. Run the knife around the bone and detach it from the meat. (Without butchering up the meat. How is this possible? Are you finding that this is hard work? It is! Food is the labor of love.)

De-bone.

After you take out both bones, the wing should look like this. Notice how the meat and skin is still intact.

After you stuff these babies, this is how they end up looking.

Bake these guys for 30-35 minutes at 400 degrees F and they come out looking so omarrrrgggerrrddd....

Serve with some sweet chili sauce, cilantro and rice.
Stuffed Asian Wings (4 servings)
8 chicken wings (tips and all)
1/2 pound of ground turkey (93% lean 7% fat)
1 1/2 tablespoons of good quality oyster sauce
4 cloves of garlic, finely minced
1/4 cup of cilantro, roughly chopped
2 stalks of scallions, sliced thin
1/2 teaspoon of freshly ground black pepper
1/2 teaspoon of kosher salt
1.2 ounces/37.5 grams of mung bean noodles, softened with hot water and drained
In a large bowl, combine chopped garlic, scallions, cilantro, ground turkey, egg, softened and drained mung bean noodles, oyster sauce, salt, pepper and mix. Set aside.
De-bone each wing by running a small sharp paring knife around the bone. Try your best to keep the meat and skin intact. Leave the tip alone for beautiful presentation. Stuff the wings with the stuffing.
Bake the wings at 400 degrees fahrenheit for 30-35 minutes until the thermometer reads an internal temperature of 165 degrees fahrenheit.
Serve with sweet chili sauce and cilantro. Have fun in the kitchen!
