Triple Berry Scones

A baker, me?

For quite some time, I was too stubborn to bake. It's too concise, calculated and there's very little room for improvisation. However, since I haven't had full access to my left hand due to my injury (I broke a finger)

I found myself clueless on what to do in the kitchen. So baking was inevitable. Since I do not have a mixer or baking tools, my options were limited. I did remember however that scones are relatively easy to bake and it also was a plus that I love scones. By the end of it, I made so many that I had to send more than half home with my boyfriend or else I would've eaten all of them. Seriosly. (Note: THIS RECIPE REQUIRES NO FANCY KITCHEN TOOLS WHATSOEVER. Go nuts!)

Combine some berries, agave nectar, water and razzmatazz in a pan. Cook over medium heat until it's reduced by half. Set aside and allow time for it it to cool completely. Don't have razzmatazz? Skip it. ;)

Sift some flour, baking powder, baking soda, sugar and salt.

Cut cold, unsalted butter into cubes and add it to the mix

Use your hands and crush up the cold butter to blend it into the dry ingredients. The pieces of butter should end up the size of peas.

Add berry puree and mix to combine

Add the wet ingredients to the dry ingredients

Mix to combine

Flour your counter

Flatten scone mix with your hands. Should be about 1 1/2 centimeter thick.

Cut into 18 pieces

Bake in two batches in a preheated 400° F/205° C oven for 14 minutes.

Flour getting on your face is a given when you bake

Cool them when they're done baking

Let's make some icing! Add 2 tablespoons of 2% milk with 1/2 cup of confectioners sugar.

Mix to combine.

Add some of that berry puree if you fancy! Strain it if you'd like. It's okay if some seeds make it to the finale.

Viola!

Triple Berry Scones 3 cups of unbleached flour 1/3 Cup of granulated sugar 2 1/2 teaspoons of baking powder 1/2 teaspoon of baking soda 3/4 cup of buttermilk 1 tablespoon of triple berry purée*** (Recipe below) 1 1/2 sticks of unsalted butter Triple berry purée*** 1/2 of frozen berries (any type will do) 2 tablespoons of a Agave nectar 2 tablespoons of water 2 tablespoons of razzmatazz (optional)

Icing

1 tablespoon of 2% milk

1/2 cup of confectioner's sugar

1 tablespoon of berry puree
